Shereen Pavlides has to get Isabella away from her makeup before they can get the pizza dough started. "Time is of the essence. Let's go," she says, setting up a mother-daughter kitchen session with a rather patient recipe at its center.

In "How to make the perfect pizza," the dough gets a slow hydration, a thorough knead and a spell in the refrigerator. Shereen says it is best on the third day, though tomorrow will do. Once shaped, it gets garlic oil and whole-milk mozzarella before baking in an indoor pizza oven. Then comes the unusual finishing touch: orange marmalade alongside burrata, prosciutto, pistachios and fresh basil. Sweetness, salt and crunch all get a seat at the table.

The pizza drew roughly 255,000 views, the largest audience among COOKING WITH SHEREEN's three uploads this week. Viewers picked up on the getting-ready detour, with jokes about doing glam for pizza, while others singled out the kitchen and the teamwork.

"Burgers, Fries & Shakes" and "My first meal of the day" rounded out the new menu. The latter is currently the channel's busiest upload by daily views, followed by the older "Surf & Turf," which has passed a million views. "Time to get your soup on!", a butternut squash soup with what Shereen calls a fancy twist, is also drawing a substantial daily audience.

Across the channel, the week brought about 3.5 million views, close to lifeofcian's weekly audience among similarly sized food channels. Subscribers held steady, while daily views are modestly above Shereen's usual level. The fresh uploads range from breakfast to shakes, but the pizza offers the week's most distinctive combination: cold-fermented dough and a spoonful of marmalade.
